So yesterday I decided to try a spin on pizza for lunch. I made a personal pizza with vegetables and chicken and a pita. I didn’t open the pita because it made a sort of cup for the stuff on top. I put mozzarella on top, placed it directly on the oven rack so that it wouldn’t be soggy, placed a cookie sheet on the rack below in case it leaked, and broiled it until the cheese was just right. I was happily stuffed! So here it is:
Cut red bell pepper, yellow bell peppers, green bell peppers, red onion, cooked chicken, and several small slices of fresh garlic into small pieces.
Sautee everything in enough pasta sauce to cover the vegetables in a small pan. When the peppers are a consistency you like, the mixture is done.
Pour the mixture onto a pita that has not been split in two or opened and sprinkle mozzarella on top. Then place in the oven directly on the rack. Put a cookie sheet on the rack below in case anything leaks. You could use aluminum foil for this, too.
Broil until the cheese is melted and bubbly.
